Veggie Thins (Biscuits)

Ingredients:

  • 1 1/4 cups flour
  • 1/4 cups dry milk powder
  • 2 tablespoons dry milk powder
  • 1 vegetable cube or packet
  • 1/4 cup boiling water
  • 2 tablespoons additional boiling water
  • 1/3 cup safflower oil
  • 1 teaspoon brown sugar
  • 1/4 cup carrots-shredded
  • 1/2 egg or egg substitute
  • additional flour for dusting
  • garlic powder

Directions

Dissolve the vegetable cube in the boiling water. Mix all the dry ingredients well. Mix the wet ingredients seperately, except the eggs. Pour the wet ingredients into the dry and mix lightly. Make a well in the center and add the egg and mix.

Place the dough on a lightly floured surface and sprinkle a little four on the top. Roll out to not more th an 1/8 inch thickness.

To avoid dough sticking to rolling pin, sprinkle a little flour on top of dough. The key is not to use to omuch flour. They will puff up otherwise. Cut out shapes wi th a cookie cutter.

Place on ungreased cookie sheet. Bake 15 minutes then turn them over and bake another 10 minutes. Cool on a wire rack.
