Pancakes
 
Ingredients:
 
1 ½ cup sifted all-purpose flour1 beaten egg
3 tsp. baking powder1 cup milk
3 tbsp. baking powder2 tbsp. melted shortening or oil
½ tsp. salt
 
Directions:
 
Sift flour, baking powder, sugar, and salt.  Combine egg, milk and oil.  Add to dry ingredients, stirring just till flour is well moistened. (Batter will be a little lumpy)  Pour mixture in hot skillet or griddle.  Yields 8 large pancakes

Simple Tips on Making the Perfect Pancake
 
  1. Use fresh ingredients
  2. Do not overmix, over mixing will make your pancakes tough.
  3. Pancake batter should have some lumps in it.  They will cook out when they are on the griddle. 
  4. I prefer a cast iron griddle for making my pancakes but electric griddles are great to.  Make sure whatever you decide to use distributes the heat evenly and you have enough space to work with.
  5. Do not go overboard with greasing your griddle.  A non stick spray is good or just a light oiling.
  6. When pouring the batter onto the grill only pour about 1/4 per pancake and space them so they do not merge together.
  7. While browning the first side do not move them around.  This will let your pancakes brown more evenly.
  8. Unless you are Emeril, do not try the two feet flip.  Your pancakes are ready when the surface is bubbly and the underside is brown.  Lift them gently and just turn the over.
  9. You can keep your pancakes warm in a 250 degree oven for about 10 minutes if you place them on a baking sheet layers of cloth towels.
