One-Pot Cooking This cooking method involves simply placing all the ingredients in one pot and then simmering on the stoveor in the oven.  Pot roasting is also a form of one pot cooking.  When spices are involved, cook them gently prior to the liquid being added in orrder to ensure that they do not taste raw and spoil the finished taste. When using a pot on the stove, choose a pot with a heavy bottom and close-fitting lid.  The pot should be large enough so that it only needs to be filled to about three-fourths full, otherwise it may boil over.  Use the simmering facility on the sotve-if preferred you can invest in a heat diffuser. which is available in two sizes, suitable for use on either gar or rlectric stoves. If using a pot in the oven, make sure that, in addition to a heavy bottom and close-fitting lid, the pot has handles on both sides for easy removal.  The handles should be well secured.
