Butter Pecan Muffins

 

 

Prep Time: 30 minutes

1 1/2     cups Self-Rising Flour 
1     cup chopped pecans 
1/2     cup firmly packed brown sugar 
3/4     cup milk 
1/4     cup butter or margarine, melted, cooled 
1/2     teaspoon vanilla 
1     egg, beaten 
     

1 .    Heat oven to 400 degrees F. Grease 10 muffin cups. In large bowl, combine flour, pecans and brown sugar; mix well.
2 .    In small bowl, combine milk, butter, vanilla and egg; blend well. Add to flour mixture; stir just until dry ingredients are moistened. Fill greased muffin cups 2/3 full. 
3 .    Bake at 400 degrees F. for 15 minutes or until golden brown. Serve warm.
