Apricot-Sausage Kabobs

Ingredients:

  • 1 pkg. (8oz) fully cooked sausage links
  • 1 can (16 to 17 oz) apricot halves, drained and 3.4 cup juice reserved
  • 1/4 cup soy sauce
  • 2 tablespoons packed brown sugar
  •  can (15 1/2 0z) pineapple chunks, frained
  • 30 sandwich picks

 

Directions:

Cut sausages into thirds in small bowl combine reserved apricot juice, soy sauce and brown sugar.  Stir in sausage pieces.  Let stand 5 minutes.

Cut apricot halves in half.  Drain sausages, reserving sauces.  Alternate apricot, sausage andpineapple pieces oneach sandwhich pick.  Arrange about 15 kabobs on microwave roasting rack, turning kabobs over and basting with sauce after half the cooking time.  repeat with remaining kabobs.

 

*Defrost shrimp under cold running water.

Makes 3Cups
