Apple-Liver Pate

SERVES   :40

Ingredients:

2       tb         Margarine or butter
   1       md         Onion, chopped
                      (about 1/2 cup)
   1                  Cl Garlic, finely chopped
 1/4       c          Apple-flavored brandy or
                      Chicken broth
   1       md         Cooking apple, pared
                      And coarsely chopped
   1                  Pound chicken livers,
                      Cut into fourths
   1  1/2  ts         Chopped fresh or
 1/2       ts         Dried thyme leaves
 1/2       ts         Salt
 1/4       ts         Pepper
   2       tb         Margarine or butter,
                      Softened

Instructions:
Heat 2 tablespoons margarine in 10-inch skillet over medium heat. Cook onion and garlic in margarine about 2 minutes. Stir in brandy, apple and chicken livers. Cover and simmer 12 to 15 minutes, or until apples are soft and livers are no longer pink in center.
Cool about 15 minutes.

Place liver mixture in blender or food processor. Add remaining ingredients.
Cover and blend on high speed about 1 minute, stopping blender occasionally to scrape sides, or process, 30 seconds or until smooth. Pour crock or bowl.
Cover and refrigerate at least 4 hours.

Garnish with fresh thyme and serve with apple slices and assorted
crackers if desired.

To Microwave: Place margarine, onion and garlic in microwavable
2-quart casserole. Cover tightly and microwave on high about 2 minutes or until onion is tender. Stir in brandy, apple and chicken livers. Cover tightly and microwave on high 10 to 12 minutes, stirring after 3 minutes, until apples are soft and livers are no longer pink in
centers. Cool about 15 minutes.
