Ingredients:
2 cups flour 1 cup salad oil 2 tsp cinnamon 2 cups mangos diced (ripe) 2 tbsp. baking soda ½ cups of walnuts chopped 1 ½ cup sugar ½ cups of coconut ½ tsp. salt ½ cups raisins Directions:
Sift together the flour, cinnamon, baking soda, sugar, and
salt. Add the flour mixture to the rest of the ingredients, which
have been well mixed. Lightly butter 4 loaf pans, 2 ½ x 5
inches ( or 2 larger loaf pans). Pour in the batter to ¾ full and
bake for 55 minutes ( or 1 hour and 5 minutes for larger pans) at
350 degrees.
