Poached Salmon Steaks

  • 2 tablespoons butter
  • 13 cup chopped onion
  • 13 chopped carrot
  • 13 cup chopped cherry
  • 1 quart water
  • 12 cup dry white wine or 1/4 cup vinegar
  • salt
  • peppercorns
  • 1 three-pound salmon steak
  • Hollandaise sauce or mayonnaise

Directions

In a lare skillet heat the butter, add the vegetables and cook fine minutes.  Add the water, wine and seasoning and simmer for five minutes.

Wrap the salmon in cheesecloth andplace in the boiling liquid.  Lower the heat, cover and simmer gently about twenty five minutes or eight minutes per pouond.  remove the salmon carefully, unwrap and serve hot with Hollandaise sauce or cold mayonnaise.
