Ingredients:

  • 2 1/2 cups cooked codfush, flaked
  • 1/4 cup chopped onion
  • 3 tablespoons chopped celery
  • 3 tablespoons chopped green peppr
  • 1/3 cup chopped walnuts
  • 1/4 cup chopped parsley
  • 2 toast slices, crumbled
  • salt and freshly ground black pepper
  • few drops of Tabasco sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried tarragon
  • 2 eggs,seperated
  • 1/2 cup light cream
  • 1/2 cup butter, melted

Direction

Preheat oven to moderate 375 degrees F.  Combine the fish, onion, celery, green pepper, walnuts, parsley, toast crumbs, salt, pepper, Tabasco, Worcestershire sauce and tarragon.  Beat the egg yolks until light and lemon colored and add them to the mixture.  Add the cream and melted butter,  Fold in the egg whites, stiffly beaten and pur the mixture into a buttered ring mold or bread pan.  Set in a pan of hot water and bake until the loaf is set, about forty minutes.  Unmold on a hot plate and serve with egg sauce.
