Mandarin Pork and Vegetables

Ingredients:

  • 1 1/4 cups cold water
  • 1/3 cup soy sauce
  • 1/3 cup light corn syrup
  • 2 tablespoons cornstarch
  • 1/4 teaspoon dried crushed red pepper
  • 1/4 cup vegetable oil, divided
  • 1 pound lean boneless pork, cut into 1/2 inch strips
  • 2 cloves garlic, minced
  • 2 cups fresh broccoli flowerets
  • 2 medium onions, cut into wedges
  • 1 carrot, scraped and sliced diagonally
  • 1/2 pound fresh mushrooms
  • Hot cooked rice

 

Directions

Combine first 5 ingredients in a small bowl; stir well.  Poir 2 tablespoons oil aroundtop of preheated wok, coatoing sides; heat at medium high heat (375º) for 2 minutes.  Add pork and garlic; stry fry 5 minutes or until pork is done.  Remove pork and garlic from wok; set aside.

Heat remaining 2 tablespoons oil in wok; add broccoli, onion and carrot, and stiry fry 2 minutes.  Add mushrooms; stir fry  minute or until vegetables are crisp-tender.  Stir in pork mixture.  Add soy sauce mixture, and stir fry until sauce is slightly thickened.  Serve over rice.  Yields 4 servings.
