   2 1/2  pounds        flank steak
   1      cup           papaya juice
   1 1/2  tablespoons   green peppercorns -- coarsely cracked
   1 1/2  tablespoons   black peppercorns -- coarsely cracked
   1 1/2  tablespoons   white peppercorns -- coarsely cracked
   6      tablespoons   olive oil
     1/4  cup           lemon juice
                        salt -- to taste

1. With a small sharp knife, make 1/2-inch-long slits in the flank steak in several places. Put steak in a glass baking dish and pour papaya juice over; cover and refrigerate for 2 to 4 hours. Remove steak from marinade and pat dry.

2. Combine peppercorns. Press them into both sides of flank steak; put flank steak in a clean baking dish, cover, and refrigerate for 2 hours. Bring to room temperature before cooking.

3. Prepare a medium-hot charcoal fire or preheat broiler. In a small bowl whisk together olive oil and lemon juice. Salt steak lightly on both sides. Grill or broil to desired doneness, turning once and basting once with half of the oil mixture. Transfer steak to wooden cutting board; brush with remaining oil mixture. Let stand 5 minutes to settle juices, then slice on the diagonal across the grain into wide, flat slices.

NOTES : Lean flank steak is marinated in papaya juice to tenderize it, then seasoned with a trio of crushed peppercorns. The thin steak, which some butchers label London Broil, cooks quickly on a grill or under a broiler; for best flavor, serve it rare or medium-rare.
