Steak Casserole

Ingredients:

1 ½ beef steak, ¾ inch thick
1 ½ tsp. salt
¼ tsp. pepper
2 Tbsp. cooking oil
½ c. chopped onion
1 clove garlic, minced
1 (12 oz) can (1 ½ c.) vegetable juice cocktail
1 (10 ½ 0Z.) CAN ( 1 ½ C.) condensed beef broth
1 1/3 C. water
1 1/3 c. long grain rice
1 (10 oz.) pkg. frozen peas
¼ c. chopped pimento

 

Directions

Cut steak into strips; salt and pepper.  Brown in hot oil.  Add onion and garlic.  Cook until tender.  Add juice, broth and water.  Cover and cook 30 minutes.  Add rice, peas, and pimiento.  Cook 20 minutes more, until meat is tender and rice is done.
