Lazy Daisy Oatmeal Cake

 

Ingredients
 
1 1/4 c. boiling water
1 c. uncooked oats
1/2 c. margarine
1 c. white sugar
1 c. firmly packed brown sugar
1 t. vanilla
2 eggs
1 1/2 c. sifted flour
1 t. baking soda
1/2 t. salt
1/4 t. nutmeg
3/4 t. cinnamon

Frosting:
1 c. coconut
1/4 c. evaporated milk
1/2 c. brown sugar
1/4 c. melted butter

Directions:


Pour boiling water over oats, stirring to mix. Let oats sit for 20 minutes. Beat margarine and both sugars until fluffy. Blend in vanilla and eggs. Add oat mixture, blending well. Sift dry ingredients together. Add to the creamed mixture, mixing well. Pour batter into a well greased and floured 9 inch baking pan. Bake at 350° for 50-55 minutes. Combine frosting ingredients. Spread frosting on cake and place under broiler. Broil until frosting starts to bubble.
