Fresh Tomato Sauce with Pasta

Ingredients:

  • 1 lb. ripe tomato
  • a small bunch of fresh chives
  • a small bunch of fresh chives
  • a small handful of fresh basil leaves
  • 1 garlic clove
  • 1/4 cup virgin olive oil
  • a pinch of salt
  • a pinch of freshly ground black pepper

To serve

14 oz. spaghetti and freshly Parmesan cheese


Directions

Rinse the tomatoes and put them on a chopping board. Cut each tomato in quarters then cut each quarter into about 4 chunks. Have a large heatproof serving bowl reaady and put the cut tomatoes straight in the bowl. Snip the chives into tiny lengths straight into the bow. Tear the basil leaves and add to the bowl

Peel the garlic and crush with a garlic press or cop finely and addd to the bowl. Add the olive oil, salt and pepper. Stir throughly. Let stand while you cook the pasta.

Cook the spaghteei in a large saucepan of boiling water with apinch of salt. Let it cook for 8 to 10 minutes or follow the instructions on the back of the package. Drain carefully, then add the pasta to the sauce. Toss gently until well mixed, then serve with plenty of feshly grated Parmesan Cheese.
