Fresh Peach Salsa

Ingredients:

  • 1 large ripe peach
  • 3 cherry tomatoes
  • 1 small lime
  • a few fresh cilantro leaves or chives
  • a big pinch of hot red pepper flakes
  • salt and freshly ground black pepper


Directions

Using a small sharp kinfe, slice the peach in half from top to bottom. Twist the haves in opposite directions, then pull apart. Ease out the pit and turn the peach halves flat side down on a chopping board and cutinto small cubes. Put the pieces in a small bowl.

Cut each tomato into 4 and add the bowl. Cut the lime in h alf and squeeze out the juice with a lemon squeezer. Pour it over the peach and tomat pieces. Snip the cilantro or chives into a bowl. Add the pepper flakes, salt and pepper and mix well. Salt and pepper more if you like to taste. This recipe is to be eaten immedately or cover and keep in the refrigerator for up to 4 hours.
