Guacamole

Ingredients:

  • 1 large very ripe avocado
  • 1 large or 2 small tomatoes
  • 1 lime
  • 1 small garlic clove
  • a big pinch of salt
  • a big pinch of freshly ground black pepper


Directions

Cut the avocado in half all around from top to bottom. Twist the fruit gently and pull the two halves away from each other. Using a teaspoon, scoop out the flesh from each half into a small bowl, throw away the seed and skin. Mash the flesh with a fork to a lumpy puree.

Rinse the tomato, then cut into quarters on a chopping board. Cut away the small green core at the top of the tomato. Chop each quarter into about 6 pieces. Add to the bowl. Cut the lime in half, then squeese ou the juice with a lemon squeezer. Add 2 teaspoons of the juice to the bowl, but keep the rest in case you need to add it later.

Peel the garlic and crush it with a garlic press or chop it very finely. Add to the bowl, then add the salt and pepper. Mix all the ingredients together with a fork-the mixture should be a bit lumpy. Taste and add more lime juice or salt and pepper as needed. Eat immediately with home baked tortilla chips.
