Microwave Cherry Preserves

 

Processing Method: Boiling-Water Method

Ingredients:

  • 3 cups pitted sweet cherries
  • 1/4 cup powdered pectin
  • 1 cup water
  • 2 teaspoons lemon juice
  • 1/2 teaspoon almond extract
  • 3 cups sugar.

Directions:

Combine cherries, pectin, eater, lemon juice and almond extract in a 3-quart, microwave-safe bowl. Cover with plastic wrap or waxed paper and bring to a boil in a microwave oven. Add sugar, stirring until dissolved. REturn covered mixture to microwave oven; bring to a boil on high settings (about 6 minutes). Remove from microwave oven; stir. Return uncovered mixture to microwave ; bring to a boil on high setting (about 3 minutes). Stir. continue cooking preserves to gelling point ( about 3 minutes). Remove from microwave oven. Skim foam if necessary. Ladle hot preserves into hot jar, leaving 1/4 inch headspace. Adjust the two-piece caps. Process 10 minutes in a boiling water canner. Do not attemt to process in microwave oven. Yield 3 half pints.
