Microwave Grape Jelly

 

Processing Method: Boiling-Water Method

Ingredients:

  • 1 1/2 cups grape juice
  • 1 tablespoon powdered pectin
  • 2 teaspoons lemon juice
  • 1 3/4 cups sugar

Directions:

Combine grape juice, pectin and lemon juice in a 3-quart, microwave safe bowl. Cover with plastic wrap or waxed paper and bring to a boil in the microwave oven on high setting (about 5 minutes). Remove from the microwave oven. Add the sugar, stirring until dissolved. Return covered mixture to microwave oven; bring mixture to a boil on high setting (about 4 minutes). remove from microwave oven; stir. Return ;uncovered mixture to microwave oven. Cook until jelly sheets from a spoon - (about 1 minute). remove from microwave. Skim foam if necessary.Ladle hot jelly into hot, sterilized jars, leaving 1/4 inch headspace. Adjust caps. Process minutes in a boiling water canner. Do not attempt to process in the microwave. Yield about 2 half pints.
