The  Fruit pyramids was one it the most popular decorations in colonial America.  It was brought by settlers from England where it had been a season favorite for a long time.  The addition of the pineapple as a topper was introduced in America.  If only the top of the pineapple is used the pyramid is said to be topped with a deceit.

Bases for Pryamids

In the Colonial days the women would build their pyramid bases out of three cabbages, graduated in sizes.  The largest cabbae should be sliced to provide a level base on your platter.  The medium sized and a small cabbage are to be stacked on the large cabbage.  Knitting needles are to be pushed through the cabbages to hollld the base together.  If using a pinapple topper, you should slice the top cabbage to provide a level surface.

Wooden cones with spikes is a second way to create a base for the pyranid.

To Make a Pyramid

Select a base for one of the choices abve or just get creative.  Select the fruit and if you are using a wooden cone, impale the fruit on the spikes.  If you are using a cabbage base or a foam coan, attach the fruit onto florist's picks.  (Do not eat fruit that has been pierced with the florist's picks, this can be contagious.

Use an icepick or skewer to punch holes in the base.  Beginning at the bottom, insert picks in the holes.  To set a pineapple or a deceit at the top of the pyramid, make three holes in the top.  Push the blunt ends of the florist's pick into the holes and push the pineapple onto the sharp ends of the picks.

Starting at the botto, push sprigs of boxwood, holly, orother greenery between the fruit.  Crowd the greenery enough to hold it in place.
