Baked Stuffed Herring

Ingredients:
8 Herrings, cleaned 300ml (½ pint) Dry Cider 4 tbsp
Breadcrumbs 1 small Egg, beaten 1 tsp Parsley, chopped
Juice and rind of Lemon 1 pinch Nutmeg Bay Leaf, well
crumbled Salt and Black Pepper |

Directions:
Pre-heat the oven to 180°C: 350°F: Gas 4. Mix together the
breadcrumbs, parsley, beaten egg, grated rind and juice of the lemon,
season to taste. Stuff the fish with the mixture.
Place in an ovenproof dish, close together: add the cider, crumbled bay
leaf and salt and pepper. Cover with foil and bake for about 35 minutes.
