Mom's Cinnamon Swirl

Mom's Cinnamon Swirls may become a a mother's day tradition. The dough is started a few hours before brunch, left to rise in a warm kitchen, then spread with a cinnamon-orange-walnut filling. Roll it up, cut it into rounds, and bake.

   1 1/2  cups          lowfat buttermilk -- scalded
     1/2  cup           warm water
   1      package       active dry yeast
     1/2  cup           light honey -- plus 2 tbsp.
   4                    eggs
  14      cups          whole wheat or unbleached white flour
   2      tablespoons   safflower oil
     1/3  cup           melted butter
     1/2  cup           maple syrup
   2      tablespoons   cinnamon
   1      cup           chopped walnuts
     3/4  cup           raisins
   1      teaspoon      freshly ground cardamom powder
   1      tablespoon    grated orange peel
   1                    egg white -- beaten

1. In a large bowl combine buttermilk, the water, yeast, and the 2 tablespoons honey. Stir until yeast dissolves. Let stand for 5 minutes.

2. In a small bowl beat eggs, then add to yeast mixture. Stir in 5 to 6 cups of flour, or enough to form a thick batter. Stir well and let stand 20 minutes.

3. Stir batter vigorously for 1 minute, then add 2 tablespoons oil and enough flour to form a thick dough. Lightly flour a counter or breadboard and turn dough onto board. Knead until smooth and elastic (5 to 10 minutes). Lightly oil a mixing bowl and put kneaded dough into it. Cover bowl with a dish towel and let rise for 40 minutes.

4. Punch down the dough, then cover again and let rise an additional 30 minutes. Preheat oven to 350 degrees F. Lightly oil a large, deep baking pan.

5. While dough is rising the second time, in a mixing bowl combine butter, maple syrup, remaining honey, cinnamon, walnuts, raisins, cardamom, and orange peel. Roll out risen dough and spread filling thickly on surface. Roll into a jelly-roll shape and cut into 12 slices. Place slices on end, packing them into the baking pan. Lightly brush with egg white.

6. Bake until lightly browned (about 30 minutes). Let cool slightly, then remove from pan.

Makes 1 dozen rolls.
