Diabetic Bran Muffins

Ingredients:
 
  • 1 1/3 cups Buttermilk,
  • 3/4 cup All Bran cereal
  • 3/4 cup Bran, 100%
  • 2 1/2 cups All purpose flour
  • 1/2 cup Splenda
  • 4 tsp Baking powder
  • 2 teaspoons Baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Applesauce, unsweetened
  • 1/4 cup Molasses, light
  • 1 teaspoon Vegetable oil
  • 1 egg
  • 1 teaspoon Vanilla extract
  • 1/3 cup Raisins
 
Directions:
 
Preheat oven 375°F. Lightly coat 16 muffin cups with cooking spray or line with paper liners. In a large mixing bowl combine buttermilk with All Bran and 100% bran. Let stand for 10 minutes. In a separate bowl, stir together the flour, Splenda, baking powder, baking soda, cinnamon & salt. Stir applesauce, molasses, vegetable oil, egg & Vanilla into the bran mixture. Mix well. Make a well in the center of the flour mixture, pour in the applesauce/bran mixture and currants. Stir just until combined. Spoon batter into prepared muffin cups. Bake for 25 minutes.
