Ingredients
 
  • 1 Tbs. oil
  • 1 onion, chopped
  • 1 large carrot, grated
  • 7 ounces snow peas, with ends trimmed
  • 1 piece of cucumber, 2 inch, chopped
  • 2 Tbs. soy sauce
  • 2 tsp. lemon juice
  • 1/2 tsp. sugar
  • salt and pepper
  • 1/4 lb. bean sprouts
 
Directions:
 
Heat oil in a large shallow pan. Add the onion, carrot, and snow peas and fry for 1-2 minutes. Add the cucumber and cook for an additional minute. Stir in the soy sauce, lemon juice, sugar, and salt and pepper to taste, and bean sprouts. Cook for 1-2 minutes and serve immediately.
