Teriyaki Beef and Pineapple Lettuce Wraps

 

Ingredients:

  • 1 lb. lean (at least 80%) ground beef
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can (8oz.) pineapple tidb its in juice, drained reserving liquid
  • 1/4 cup teriyaki baste and galze sauce
  • 1 tablespoon cornstarch
  • 2 green onions, sliced (e tablespoons)
  • 14 cup diced red  bell pepper, if desired
  • 5 large Bibb lettuce leaves ( you can use fresh lettuce from your garden if you desire) 

Directions

In a 10 inch skillet, cook ground beef over medium high heat 5 to 7 minutes, stirring occasionally, until throughly cooked; drain.  Stir in salt and pepper.

In a small bowl, mix reserved pineapple liquid, baste and glaze sauce and cornstarch.  Stir in mixture into ground beef.  Cook and stir until thick and bubbly, stirring frequently.  Stir in pineapple, green onions and bell pepper.  Cook  to 2 minutes, stirring occasionally, until throughly heated.  Spoon about 1/2 cup mixture into each lettuce leaf; roll up to serve.
