3 pounds
potatoes (6 large)
¼ cup finely
chopped onion
¼ cup margarine
or butter
1 12-ounce
carton small cured cream style cottage cheese (1 ½
cups)
¼ cup snipped
parsley
1 teaspoon
salt
Margarine or
butter, melted
Directions:
Cook, peel, and
mash the potatoes.
In a saucepan cook onion in ¼ cup margarine till tender
but not brown.
Stir in onion, cottage a cheese, parsley, and salt into
mashed potatoes.
Spoon the potato mixture into a well-greased 2-quart
casserole.
Drizzle melted margarine over the top. Bake at 350 degrees
till mixture is heated through and browned for about 30
minutes. Garnish
the potato casserole with additional snipped parsley, if
desired.
