Cuban-Style Tofu

  • 1/3 cup orange juice
  • 2 tbsp. lime juice
  • 2 cloves of garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 (16 0z) pkg. extra firm tofu drained and cut horizontally into 4 1/2 inch thick slices
  • 8 slices Italian Bread
  • 4 lettuce leaves
  • 4 tomato slices
  • Lowfat mayonnaise

Directions:

combine orange juice, lime juice, garlic, cilantro, cumin, salt and pepper in small bowl. Pour over tofu in large resealable plastic bag; seal and refrigerate 30 minutes.

Coat cold grill rack with nonstick cookinng spray. Preheat grill to medium-high heat. REmove tofu from bag; discard marinade. Grill tofu 5 minutes on each side or until thoroughly heated. REmove from grill; set aside.

Grill bread 1 to 2 minutes or until lightly toasted. Serve tofu on bread with lettuce, tomato and lowfat maonnaise, if desired; serve immediately.
