Broccoli Medley

Prep Time: 8 minutes Cook Time: 10 minutes Serves 6

 

  • 1 tbsp olive oil
  • 1 clove of garlic, minced
  • 1 1/4 lb. broccoli, cut into bite size pieces ( 5 cups)
  • 1/2 red bell pepper, cut in thin strips
  • 1/2 yellow bell pepper, cut in thin strips
  • 2 tbsp soy sauce

Directions:

Heat olive oil and garlic in wok or skillet. Add broccoli and stiru-fry for 1 minute. Add the peppers and continue to stir-fry for 3 to 4 minutes more or until vegetables are crisp-tender. Add soy sauce and cook and stir until heated through.
