Swedish Coffee Cake

Ingredients:

  • 1/4 cup butter
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs, seperated
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 cup shopped pecans, or walnuts

Directions:

Preheat the oven to 350 ° F. Butter a 9 inch layer cake pan. In a mixer, cream the butter and 1 cup sugar until light and fluffy.

In a small bowl, mix together the flour, salt, and baking powder. Combine the egg yolks and milk. Add the flour and egg mixtures to the butter alternately, mixing completely.

Beat the egg whites until stiff but not dry and fold into the batter. Pour into the pan.

In a Small bowl, combine the remaining sugar, cinnamon and nuts. Sprinkle over the top of the cake. Bake for about 40 minutes, or until a toothpick inserted in the cernter comes out clean.

Yields 1 cake
