Country Breakfast Cobbler 
Prep Time: 30 minutes (Ready in 1 hour 10 minutes)
 

FILLING 

  •  1     tablespoon oil 
  • 1     large onion, chopped 
  • 4     cups frozen hash-brown potatoes 
  • 3     cups chopped cooked ham
  • 1/3     cup chopped fresh parsley 
  • 6     oz. (1 1/2 cups) shredded Cheddar cheese 

TOPPING 

  • 1 1/2     cups Martha White® Self-Rising Flour 
  • 1 1/4     cups milk 
  • 1/2     cup butter or margarine, melted 
  • 1/2     teaspoon coarse ground black pepper 
  • 5     eggs, beaten  

Direction     

1 .    Heat oven to 400 degrees F. Grease 13x9-inch (3-quart) baking dish. Heat oil in large skillet over medium-high heat until hot. Add onion; cook until tender, stirring occasionally. Add potatoes and ham; mix well. Remove from heat. Stir in parsley. Pour into greased baking dish. Sprinkle with cheese.
2 .    In medium bowl, combine all topping ingredients; beat with wire whisk until smooth. Pour batter over filling in baking dish. 
3 .    Bake at 400 degrees F. for 35 to 40 minutes or until golden brown.
