Ingredients:

  • 10 ounces skinned and boned chicken breasts, thinly sliced
  • 1 tablespoon plus 1 1/2 teaspoons teriyaki sauce
  • 1/2 teaspoon grated pared ginger root
  • 2 teaspoons peanut or vegetable oil
  • 1/2 cup chopped scallions
  • 1 garlic clove, minced
  • 1 cup each sliced mushrooms and julienne-cut zucchini
  • 1'3 cup water
  • 2 teaspoons cornstarch
  • 1/2 packet instant chicken broth and seasoning mix
  • 1 cup cauliflower florets, blanced

Directions

In bowl combine chicken, teriyali sauce, and ginger; set aside, scallions are soft.  Add mushrooms and zucchini and saute, stirring constantly, until vegetables are just tender; add chicken mixture and cook, stirring and turning until chicken is no longer pink.  In measuring cup or small bowl combine water, cornstarch, and broth mix, stirring to dissolve cornstarch; add to chicken mixture and stir to combine.  Add cauliflower and cook over medium heat, stirring constantly until thickened.
