Cajun Fried Chicken

Mix together 1/2 cup flour, salt, garlic

Ingredients

  • 1 cupall-purpose flour
  • 2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoon paprika
  • 1 teaspoon dried thyme, crushed
  • 1 teaspoon dried oregano,curshed
  • 1/4 teaspoon black pepper
  • 1/2 to 1 teaspoon cayenne pepper
  • 1  2-1/2 to 3 pound broiler-fryer chicken, cut up
  • 2 Eggs Beaten
Directions:

Mix together 1/2 cup flour, salt, garlic powder, papriks, thyme, oregano, black pepper, white pepper and cayenne pepper in bowl; set aside.  Coat chicken pieces with remaining 1/2 cup flour; shake off excess flour.  Dip chicken pieces in beaten eggs, then coat chicken with seasoned flour mixture.

Heat oil about 1/2 inch) in 12-inch skillet over medium-high heat until hot.  Add chicken, skin-side down, and brown quickly on all sides, about 10 minutes.  Reduce heat to low; cover and cook until thickest pieces are done, about 30 minutes, turning once or twice.  Remove cover during last 5 minutes of cooking to crispen chicken.
