Baked Lemon Pudding

Ingredients:

  • 2 eggs seperated
  • 1/4 teaspoon salt
  • 1/4 cup sugar, divided
  • 1 tablespoon grated lemon peel
  • 5 tablespoons lemon juice
  • 2 tablespoons melted butter
  • 3 tablespoons all purpose flour
  • 1 cup milk

Directions:

Heat the oven to 350 degrees F.  Grease -quart casserole.  Combine egg whites and salt.  Beat at high speed of electic mixer until moist peaks form when beaters are raised.  Add 1/2 cup sugar gradually.  Beat until stiff. 

Beat egg yolks, lemon peel. lemon juice and butter in small bowl until blended, using same beaters.

Combine remaining 1/4 cup sugar and flour.  Stir into egg yolk mixture.  stir in milk.  Fold in egg whites by hand.  Pour into casserole.  Pour 1/2 inch hot water into baking pan.  Place casserole in pan.  Bake at 350 degrees for 55 to 65 minutes or unitl top is form and browned. 

serve warm or at room temperatuare.
