Ingredients:
4 slices bacon
4 T. quick grits 1 c. water 2-4 eggs salt and pepper Directions:
In two 15 oz. corning ware casseroles with snap on plastic lids, using scissors, dice bacon into the bottom of the casseroles. Cover with lids and microwave 3 minutes on high. Remove from the microwave, remove lids and add grits and water. Re-cover and microwave an additional 3 minutes on high. Remove casseroles from oven, remove lids and top with eggs and season with salt and pepper. Cover and microwave 2 minutes on high. Remove lids and serve.
