Applesauce Raisin Cake
 

 

Ingredient:

 
1 3/4 c. sugar
1/2 c. shortening
1 egg
1 1/2 c. unsweetened applesauce
2 1/2 c. flour
1/2 t. salt
1/2 t. cinnamon
1/2 t. allspice
1/2 t. cloves
2 t. baking soda
1/4 c. boiled raisin juice
1 1/2 c. raisins, boiled and cooled

Caramel frosting:
1/2 c. butter or margarine
1 c. firmly packed brown sugar
1/4 c. milk
2 c. powdered sugar

Directions:

Cover raisins with water and boil for 5 minutes. Drain and set aside 1/4 cup of the juice. Combine all ingredients and bake at 350° for 40-50 minutes in a 9x13 inch pan. In a small saucepan, combine butter and brown sugar. Bring to a boil over low heat and cook for 2 minutes, stirring constantly. Add milk, bring to a boil and remove from heat. Cool to lukewarm. Gradually add powdered sugar and stir until smooth. If too thick add hot water. Spread over cooled cake.
