Directions: Core and peel the cooking apples. Slice the apples thinly, then place them in a large saucepan. Add the water water and the sugar; then cook until the apples are very soft. Next, sprinkle in the cornstarch, stirring and beating to avoid lumps. Stir in the lemon juice. Set aside and allow to cool. Place in a blender and blend until smooth. Pour into dessert dishes and chill until it is time to serve.
